Sloppy Joe Pie

1 lb. ground beef
1/2 cup onion, chopped
8 oz. can tomato sauce
8 oz. can corn
1 envelope Sloppy Joe mix
10 oz. can Hungry Jack biscuits
2 tbsp. milk
1/3 cup cornmeal
1 cup (4oz.) grated Cheddar Cheese

Preheat oven to 375F. Brown ground beef and onion, drain. Stir in tomato sauce and corn (with water from corn) and seasoning mix. Heat mixture till hot and bubbly. Reduce heat and simmer while preparing crust.

Separate biscuit dough into 10 biscuits. Flatten slightly, dip each in milk then in cornmeal to coat both sides. Arrange 7 biscuits around sides and 3 on
bottom of ungreased 9 or 10 inch pie plate. Press together to form a crust. (Biscuits will form petal like shape around rim of pan). Sprinkle crust with 1/2 of the cheese. Spoon hot meat mixture over cheese; sprinkle w/ remaining cheese.

Bake 20 to 25 minutes until crust is deep golden brown. Cool 5 minutes before serving. Feeds 4 to 6 people.

Yorkshire Pudding w/ Ground Beef

1 cup sifted flour
3 Tbs. Grated onion
2 tsp. salt 1/2 tsp Pepper
1/8 tsp. Nutmeg
1 clove Garlic, minced
Dash cayenne pepper
2 Tbs. minced Parsley
1 Cup Milk
3 Tbs. Vegetable Oil (Beef drippings are better)
2 Eggs
1 1/2 Lb. Ground beef


Sift together 1/2 tsp. salt, the Nutmeg and Cayenne. Gradually, beat in milk and one egg at a time until frothy (as an adult beverage in a frozen glass)


In a seperate bowl, combine the remaining ingredients, except for the oil.


Add oil to 12" cast iron (or similar) pan and place in oven. Heat oven to 425 degrees. CAREFULLY remove pan and pour 1/2 batter, evenly, therein. Quickly scatter burger mix thereon and, evenly, pour remaining batter, again, thereon.


Bake at 425 degrees for 15 minutes and reduce heat to 350 degrees for another 20 minutes or until puffy and brown. Do not peak until last 10 minutes. Serve immediately with your favorite mushroom or tomato sauce. Snap beans or a salad go well with it.
