- Cheese and Garlic Biscuits

c. bisquick (that's easier than flour)
2/3 c. milk
1/2 c. grated cheese
1/4 tsp. garlic salt.
Mix ingredients together and press biscuits onto
un-greased cookie sheet. Bake at 425 degrees for 8-10
minutes. Rub with butter and enjoy!
Swampbaby adds: brush the tops with a mixture of
melted butter, fine parsley, and a drop or two of
Worcestershire. Lori puts garlic in the biscuits and I
add a little garlic to the butter mixture. Either way
it's ummmmmm good.

- Kat's Banana Bread

eggs, beaten
1/3 cup buttermilk
1/2 cup vegetable oil
1 cup mashed bananas
1 1/2 cups white sugar
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans (optional)
- Preheat
oven to 325 degrees F (165 degrees C). Spray one 9x5
inch loaf pan with non-stick spray coating.
- Blend
together the eggs, buttermilk, oil and bananas.
- Sift
together the sugar, flour, baking soda and salt. Add
to banana mixture and stir in pecans. Mix well.
- Pour
into prepared loaf pan and bake 1 hour and 20 minutes
or until a cake tester inserted in the center comes
out clean.

- Mexican Cornbread

- 2 eggs
1/4 cup corn oil
1 cup buttermilk
1 1/2 cups shredded Cheddar cheese
1 (8 ounce) can cream-style corn
1 large onion, chopped
2 fresh jalapeno peppers, seeded and minced
1 cup cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square
baking dish or a cast iron skillet.
In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1
cup shredded cheese, creamed corn, onion, and jalapenos.
In a large bowl, whisk together cornmeal, flour, baking powder, soda,
and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour
batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top.
Bake for 30 to 35 minutes until center is set and top is golden brown.

- Very rich and flavorful with a
crisp topping of cheese. Great with home made soups and stews.

- Mexican French Toast

- Batter:
3 Eggs
1/3 Cup Milk
Pinch of Salt
Pinch of Black Pepper
Other Ingredients:
Texas Toast bread
Jar of your favorite Salsa
Shredded Mild Cheddar Cheese
Vegetable Oil
Beat batter ingredients together.

- In a frying pan put vegetable oil
and heat as you would for frying. Lay slice of bread in batter covering
fully. Fry in the oil until crispy on both sides or to liking. Once
bread gets done with frying put on plate then cover with cheese.
You can also use sliced cheese but the shredded melts better. Then as
you fry more and more bread layer; bread, cheese, salsa.
