Creamy Dreamy Banana Pudding

4 cups milk
2 large packs vanilla instant pudding
(or 3 small packs)
1 8 or 9 oz cool whip
1 cup sour cream
1 box vanilla wafers
5 large bananas

Combine pudding mix, sour cream, and 1/2 cool whip. Layer wafers, then banana slices, then pudding. Top with remaining cool whip.

Best made early on the day you serve this or the night before.

Keep refrigerated
Buttermilk Pie

1/2 cup margarine, softened
2 cups white sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
3 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 (9 inch) deep dish pie crust


Preheat oven to 400 degrees F (200 degrees C.)
In a large bowl, cream margarine and sugar. Beat in flour and salt. Blend in the eggs. Stir in the buttermilk and vanilla. Pour into pie shell.
Bake in the preheated oven for 15 minutes, then reduce temperature to 325 degrees F and bake 45 minutes, or until filling is set.
Extra Special Blueberry Pie

1 (15 oz.) package PILLSBURY
All Ready Pie Crusts
3 cups fresh blueberries (I actually use a little more and substitute my free briar berries)
1 cup peeled, thinly sliced green apples
1 cup sugar (Have used a sugar substitute)
1/2 cup chopped walnuts (for sure I use more and substitute pecans)
3 Tblsp quick-cooking tapioca
3 Tblsp brandy (I use water)
1/2 teas ground nutmeg
2 Tblsp butter
1 Tblsp milk

Combine in a large bowl: blueberries, apples, sugar, nuts, tapioca, brandy or water, nutmeg. Mix well. Let stand 15 minutes. (I let it stand while I do the piecrust stuff).

Prepare piecrust sheet according to package directions for a filled two crust pie using a 9 inch pie plate. Reserve remaining pie crust and set aside. Spoon filling evenly into pastry shell and dot with butter.

Cut remaining piecrust sheet into 1/2 inch wide strips and arrange in a lattice fashion over filling (OR cheat and use small diameter circle and cut holes in some sort of pattern). Trim edges, seal and flute. Brush pastry top with milk.

Bake at 400 degrees for 10 minutes, reduce temperature to 375 degrees and continue baking for 20 to 30 minutes or until golden brown and bubbly. Cover edges of pastry with strips of aluminum foil to prevent over-browning, if necessary.

Apple Nut Cake

1 1/2 cups vegetable oil
1 1/2 cups sugar
1/2 cup firmly packed light brown sugar
3 eggs
3 cups all-purpose flour
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
3 1/2 cups Granny Smith apples, peeled and cut into large dice (see note)
1 cup coarsely chopped walnuts (can use pecans)
2 teaspoons vanilla
Combine oil and sugar in a large bowl and blend well. Add eggs one at a time, beating well after each. Sift together dry ingredients. Add to first mixture, blending thoroughly. Fold in apples, nuts and vanilla. It is best to do this by hand. Mixture will be very thick. Spoon into greased and floured 10 inch tube pan, spreading evenly. Bake at 325 degrees until cake tests done, about 1 3/4 hours. Let cool in pan 20 minutes.
 
Turn out onto wire rack and continue cooling while preparing glaze.
Note: Keep apples from browning by placing them in a large bowl of lightly salted water. They do not need to be drained; just lift them out of the water with your hands and add to batter.
GLAZE
3 tablespoons butter
3 tablespoons light brown sugar
3 tablespoons sugar
3 tablespoons whipping cream
1/4 teaspoon vanilla
Combine sugar and cream in heavy saucepan and bring to a boil over medium heat. Let boil 1 minute. Remove from heat and add vanilla. Spoon over warm cake.
Jell-O Whatever

1 package Jell-O any flavor (4 serving size)
3/4 cup boiling water
1/2 cup cold water
ice cubes
1 cup thawed non-dairy whipped topping
1 can (20 oz.) crushed pineapple (drained)
1 can (11 oz.) drained mandarin oranges
1 cup mini marshmallows (I like the colored kind)

Dissolve Jell-O in boiling water.

Combine cold water and ice cubes to make 1 3/4 cup and stir into Jell-O until slightly thickened.

Remove ice that hasn't melted yet.

Add whipped topping until smooth.

Add oranges, pineapple and marshmallows.

Chill until set.

Now you can add chopped nuts if you wish, but some don't like them. Also I used fat-free whipped topping. If doubling recipe, try adding a sugar free package of Jell-O to the regular one.
Southern Gingerbread

2 eggs
3/4 cup light brown sugar, firmly packed
3/4 cup molasses
3/4 cup melted shortening (butter or margarine)
2 1/2 cups all-purpose flour, sifted
1/2 teaspoon baking powder
2 teaspoons soda,
1 1/12 teaspoon cinnamon
1 1/2 teaspoon ginger
1/2 teaspoon salt
1 cup boiling water

Add beaten eggs to sugar, molasses and shortening. Add dry ingredients that have been mixed and sifted. Stir smooth. Add hot water and stir quickly.

Pour into a greased and floured 9 x 13 inch pan. Bake at 350 degrees for about 35 minutes.

Note: This was my mother's recipe. I think it is best served warm with butter. It is also good served with a lemon sauce.
Chocolate Pound Cake

1/2 lb butter
1/2 cup shortening
3 cups sugar
5 eggs
3 cups plain flour (sifted)
1/2 tsp baking powder
1/2 tsp salt
4 tbls cocoa
1 cup milk
1 tbls vanilla
Cream butter and shortening; add sugar, beat until light and fluffy. Add eggs one at a time beating well after each addition. Combine dry ingredients; add dry ingredients and milk alternately to creamed mixture, beating well after each addition. Add flavoring. Spoon batter into a greased and floured 10 inch tube pan.
 
Bake at 350 for 10 minutes then reduce heat to 325 and bake for 1 hour and 20 minutes more.
The VERY BEST Banana Pudding

1 1/2 c. cold water
1 pkg. of vanilla instant pudding
1 can of condensed milk
1 pint of whipping cream (whipped)
bananas
vanilla wafers
Combine first 3 ingredients and chill for 5 minutes.
 
Whip whipping cream then fold into chilled mixture. Arrange bananas & vanilla wafers as desired and pour mixture over top. Then top with vanilla wafers.

The website below has all kinds of outrageous recipes - most I wouldn't recommend for human consumption - but this recipe for "Kitty Litter Cake" is actually pretty good and would make a great birthday cake for someone with a sense of humor...

Chocolate Éclair Cake

2 boxes of French Vanilla instant pudding
3 cups of milk
1 8-oz. container of cool whip
Graham Crackers
 
ICING
6 T. of margarine
2& 2/3 cup powdered sugar
1/2 cup cocoa
6-8 T. Milk

Butter a 9 x 13 pan or glass dish and set aside. Mix pudding and milk. Beat for 2 minutes, fold in cool-whip.
 
Place a layer of Graham Crackers in the buttered pan or dish to cover the bottom/ 
 
Top with 1/2 0f the pudding mixture, then another layer of the Graham Crackers. Put the remaining pudding and then another layer of the Graham Crackers. Top with the chocolate icing and chill for several hours....overnight is best!
