Mississippi Sin

2 cups shredded cheddar cheese, (8 oz)
1 package cream cheese, softened, (8 oz)
1 1/2 cups sour cream
1/2 cup chopped cooked ham
1/3 cup chopped green chiles
1/3 cup chopped green onions
1/8 teaspoon Worcestershire sauce
1 (1-lb) round loaf French bread

Combine first 7 ingredients in a medium bowl, stirring well. Set dip aside.

Cut a thin slice from top of bread loaf; set slice aside. Using a gentle sawing motion, cut vertically to, but not through, bottom of the loaf, 1/2 inch from the edge. Lift out center of loaf; cut into 1-inch cubes, and set aside. Fill hollowed bread loaf with dip; cover with reserved top slice of bread loaf. Wrap reserved loaf with aluminum foil. Bake at 350 degrees for 1 hour. Serve with reserved bread cubes, crackers, or potato chips.

Makes about 4 cups of dip.
Spiced Pecans

1 cup sugar
1/3 cup whipping cream
1/2 teaspoon salt
dash of ground cinnamon
1 teaspoon grated orange rind
2 teaspoons orange juice
1 1/2 cups pecan pieces

Combine firt 4 ingredients in a large saucepan; stire well.

Place over medium high heat, stirring constantly and cook to soft ball stage (235 degrees).

Stir in rind and juice.

Remove from heat; add pecans and stir until coated.

Spread pecans on waxed paper and immediately separate into clusters with a spoon. Let cool.

Yield: about 2 dozen pieces
Spinach Brownies

1 cup sifted flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs (beaten)
1 pkg. frozen chopped spinach (thawed & drained)
1 cup milk
1/4 cup margarine
1/2 cup chopped onion
1 lb. shredded cheddar cheese

Sift and mix flour, salt, baking powder.

Add eggs, milk and margarine.

Stir and add onions, cheese and drained spinach.

Mix all well and place in 9x13 pan.

Bake at 350 degrees for 30 minutes.

Cut into squares.

Can freeze - at serving time, reheat for 10-12 minutes.
Crock Pot Smokies

4 lbs little smokies
2 11oz bottles barbecue sauce
1 15oz jar grape jelly

Place 2 lbs smokies in a 4 quart crock pot. Open one bottle of barbecue sauce and one half grape jelly. Fill crock pot with remaining smokies, then barbecue sauce, then grape jelly. Cover and let simmer for 2 hours. Stir. Let simmer another hour. Stir. Let simmer remaining hour. Serves 8 - 12.

Adjustments: allow 1 hour cooking time per pound of smokies with 2 hour minimum.

Crock pot size: allow one quart for each lb of smokies (example: if you have four lbs of smokies, you're going to need a four-quart crock pot)

Note: meatballs (like the packaged kind you get at Wal-Mart or Sam's Warehouse) may be substituted for smokies
