- Chicken Thingy

- 3 or so chicken breasts, cooked & diced
(ALWAYS use more cause we love lots of chicken)
15 oz. sour cream (can use less)
2 cans Cream of CHICKEN soup - 10 3/4 oz each
salt
pepper
Topping:
2 sleeves Ritz Crackers
2 sticks butter
Cook the chicken breasts and dice. Put into 13 x 9
pan. Add sour cream, Cream of Chicken soup, salt and
pepper to taste. Stir till completely mixed.
Topping: Crush the Ritz Crackers - a ziplock bag
works great and the quart size can handle this
amount. Crush the 1st sleeve then simply add the 2nd
sleeve and crush again. Melt the butter (or
margarine). Mix together and spread on top of the
chicken mixture.
Bake at 350 degrees (325 for glass dish) for 1 hour
or until bubbling.
Can be mixed ahead, covered tightly, and stored in
refrigerator.

- Flavorful Party Wings

lbs chicken wings
2 cups flour
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
Cooking Oil of your choice (I use corn oil)
If you have whole chicken wings, cut them into party
wing pieces, minus the wing tips (wing tips can be
bagged and frozen for later use). You can also
purchase the chicken wings already pre-cut in 5 lb
bags.
Whatever size pot you use to fry your chicken, fill it
with oil to 2/5 to 1/2 full of cooking oil. Set burner
to medium heat to allow oil to get hot.
Mix flour, salt, garlic and onion powders together.
Take a few chicken pieces at a time and roll them
around in the flour. Place them in the pot when oil is
hot enough. Fry for about 10 minutes or until golden
brown
I never have any left over when I serve these
at parties.

Breasts (seasoned to taste)
1 pkg onion soup mix
2 cans cream of mushroom soup (fat free ok, if you desire)
6 oz water
Place breasts in large baking dish
Mix onion soup mix, mushroom soup and water. After mixing the soups and
water, pour over chicken. Cover entire dish with foil
Best if cooked @ 200 for several hours, if time does not permit, 350 for
one hour.
This can also be done with a roast, all day at low temp is best, but if
you do not have the time, cook at the time and temp you would for any
roast.
If you prepare this early on Sunday morning (8 or so) and cook it until
you get home from church you have an easy dinner, if you add some rice
and a green veggie.
